WINEMAKING TECHNIQUES
Vinification is conducted with great care and attention by Alexandra Martet. The harvest date is determined by precise monitoring of ripeness levels. The grapes are carefully sorted when they reach the winery. Pre-fermentary maceration is performed in order to extract the fruity aromas. Fermentation is then carried out in temperature controlled vats with the aim of extracting as much as possible of the polyphenols. Lastly comes post-fermentary maceration lasting 10 days on average, with tasting sessions to determine the de-vatting moment. Maturing on the fine lees until bottling.
TASTING NOTES
Visual : a lovely intense colour.
Nose : aromas of fresh and ripe fruit.
Palate : warm in the attack and good structure on the palate all go to make Château De Lavison a truly authentic wine that can be opened now or within the next 5 years.
