Domaine de la Gypière

Domaine de la Gypière is located in the heart of the Provence wine region.
This charming estate covers 22 hectares in the Côtes de Provence PDO
appellation. Its name comes from the gypsum quarry which has been on
the estate since the 17th century. Our special wine "Les Armoises de la
Gypière" pays tribute to the Armoise de Molinier, a Natura 2000-protected
species. Lake Gavoty, near the property, is one of the only sites in the world where this hardy, fragrant plant grows.

The grapes are picked between 4 am and noon in order to keep them under 20°. The harvested grapes are then transferred to a heat exchanger so that they will reach the press at a temperature close to 10°. The direct pressing method is used, i.e. the maceration takes place directly inside the membrane press. The cycle lasts around 4 hrs.
As they leave the press the wines are cooled to 4° for a period of 5 days in order to consolidate the fruit flavours. Fermentation is then started and lasts around 3 weeks.


Tasting notes
This lovely wine blends freshness and balance, with aromas of fresh fruit, sweet orange and white flowers. Serve at 8° to 10°
