Katnook Estate - Australia - Cabernet Sauvignon

Katnook Estate Cabernet Sauvignon captures the essence of Coonawarra. Batch-vinification takes place in closed static fermenters with regular pumping over. 

The wine is allowed to macerate on skins for 7-14 days before transfer to approximately 30%-40% new French oak, predominantly medium grained Nevers, for around 22 to 24 months before bottling. 

Wayne Stehbens, a veteran of over thirty Coonawarra vintages, has markedly refined the style. His philosophy is to capture varietal distinction and regional excellence, with complementary oak and maturation flavours. Bottled under screwcap, Katnook Estate Cabernet Sauvignon typically shows ripe middle palate focus with intense blackcurrant mulberry aromas, generous pure-fruit flavours, finely grained tannins, underlying mocha notes and excellent flavour length. The wines have an outstanding reputation for medium to long term cellaring.
