Winemaking

From the freshly pressed must of Moscatel grapes and a small adition of Tempranillo red wines, alcoholic fermentation starts slowly, at controlled temperatures, in stainless steel tanks until we reach 5-5,5% of alcohol. The tanks are then hermetically sealed, and a second; much slower fermentation is started at a lower temperature.
This is traditionally called the "prise de mousse" or creation of the

sparkle, created an elegant bubble which is integrated into the wine.
When the alcohol reaches 7% we stop the fermentation  reduction the temperature to -1°C.
The wine is then filtered to remove any remaining yeasts and transferred to a sealed, controlled temperature tank and prepared for bottling.

Moscatel grapes from Spain with small contribution of Tempranillo.

Alcohol: 7% vol.
Dosage: 84 g/L

Tasting note

Beautiful blush sparkler, with pale pink color and elegant persistent mouse.
Charming nose, a mix of flowers with red and tropical candies. Delicious palate balanced by a fresh natural sweetness, red forest fruits jam and a delicate finish.
Enjoy this wine during formal and informal moments; with salmon or shrimp carpaccios, red fruit with figs salad, cupcakes, blue cheeses, or Asian cuisine.
