WINEMAKING TECHNIQUES :

The grapes are pressed using a pneumatic press. The musts of the resultant juice are left to settle under cold conditions (8°C). Alcoholic fermentation takes place in temperature controlled vats (18°C), started off by the addition of yeasts which are specially selected for their ability to bring out the aromas of the Colombard & Ugni blanc grapes.


TASTING NOTES :

Visual : A pale yellow colour.

Nose : Fairly complex, first expressing citrus notes  (lime, lemon). Swirling then reveals delicate aromas of white fruits.

Palate : Great balance. The perfect ripeness of grapes brings notes of cooked apricots and pears.


SERVING SUGGESTION :

This wine makes an ideal aperitif and is the perfect partner for your aperitif, white meat and Asian dishes. Best served at a temperature of 10°C.
