Yvon Mau Cabernet White Sauvignon

The Yvon Mau varietals range is a selection of bold, convivial wines with an irresistible balance of fruit and body. They are the fruit of a historic partnership between Yvon Mau and a selection of local winegrowers in the South of France. These partners share the same values which have always inspired us: passion, commitment and quality. 

Presentation

Vin de Pays de l'Aude is a local PGI and one of the Vins de Pays d'Oc. This is a region that sees sharp climate variations between the ocean, the mountains and the sea, producing a wide variety of wines. It also boasts such historic sites as the City of Carcassonne, the Minervois region and the Corbières mountains with ancient rocks that give the wines a characteristic mineral character. 

Terroir 

Gravels on clay, Clay and limestone plateaux. 

Winemaking 

Vinification takes place in temperature-controlled vats. After a short, prefermentation, maceration, the fermentation takes place a very quickly (over 4 or 5 days), and the wines are then immediately run off. This technique enables the richness and generosity of the Cabernet grapes to be fully expressed.

Tasting tips 

A classic Cabernet Sauvignon with a resplendent purple robe. The nose combines lively red fruit aromas (blackcurrant, cherry) with a subtle touch of vanilla. Well-balanced on the palate, with great maturity of flavour and a tannic structure which is dense yet silky-smooth. 

Service

Best served young, at room temperature(16°C).
