Superficial to deep chalk and clay-limestone plateau.
7% Cabernet franc
Close monitoring of the ripening process. Harvesting followed by de-stemming, cleaning and a very careful selection of the grapes. Vinification takes place in temperature-controlled stainless steel vats with maceration lasting 3 to 5 weeks. Maturing in oak barrels, of which 50% are new, for 6 to 12 months.
Appearance: A deep cherry-red with a ruby rim.
Bouquet: Very fine, offering complex notes of smoke and black fruit. Swirling brings out aromas of morello cherry and cocoa.
Palate: Frank in the attack with good volume; supple development towards black fruit and liquorice, enhanced by a hint of vanilla and toast. The long finish has substance, while the tannins prove this wine's good ageing potential.
Will go well with grilled or roasted meat (duck, beef...) or strong cheeses.
