Winemaking process

The Early hand-picking is followed by the traditional winemaking method as pressing, first fermentation and second fermentation in the bottle, maturing, riddling, disgorging and bottling.

Tasting notes

Pale yellow appearance with hints of almond green, and fine bubbles. Fresh and elegant bouquet, with aromas of lime enhanced by notes of orange and green mango. Swirling reveals a delicately creamy, biscuit-like quality. The palate is fresh and fruity, with very fine bubbles. The second fermentation reveals notes of lime, Granny Smith, and pear. Delicate aromas of bread and compote on the finish.

Food pairing

Serve at 8°C, with desserts, or as an aperitif for bubbly evenings with friends and family.
