Yvon Mau Sauvignon

The Yvon Mau varietals range is a selection of bold, convivial wines with an irresistible balance of fruit and body. They are the fruit of a historic partnership between Yvon Mau and a selection of local winegrowers in the South of France. These partners share the same values which have always inspired us: passion, commitment and quality. 

Presentation

Comté Tolosan is an appellation for wines that can be produced in the vineyards of south-west France, covering 12 different departments and reflecting all the variety and riches of the region. However, most of the white wines are grown on the Gers hillsides. 

Terroir 

Sand-silt (Armagnac sands) on clay-sandstone subsoil. 

Winemaking

Particular care goes into the state of health of the Sauvignon grapes and into their transport to the winery; it is essential to avoid any oxidation during this pre-fermentary phase in which the aromas first emerge. 

The modern vinification methods used include maceration on the skins for around 10 hours at 12°C in order to strengthen the aromatic potential and flesh of the wine. After the pneumatic pressing, the must is left to settle in stainless steel vats (48hrs) before the alcoholic fermentation is carried out under temperature control (16 to 19°C). The wine is then kept on the fine lees until filtration prior to bottling.

Tasting tips

This Sauvignon boasts a limpid yellow robe shot through with flashes of gold. The powerful nose combines intense grapefruit aromas with lighter floral notes. The palate is fresh and lively, revealing a broad array of citrus aromas and exotic fruit flavours.

Serve chilled (10°C).
